Arogos traditional Greek fleur de sel is harvested In the Mani region of Lakonia, Greece.  For millennia sea salt has been harvested the traditional way in this part of the world.  Since ancient times, farmers have collected salt from the rocks on the sea shores in natural ponds.  As the water evaporates the sea salt turns into flakey crystals and this is where the name “fleur de sel” or “flower of salt” comes from.  We harvest and package our salt according to traditional techniques.  Using natural means the salt is scraped and collected manually.  This salt is quite simply the best of the best.  It is the highest quality, or the caviar, of salts.  The salt is 100% natural and no chemicals or preservatives are added.  It is rich in natural iodine and has numerous health benefits.

Mani and Lakonia Greece

Arogos traditional Greek fleur de sel comes from the Mani Peninsula, which is a geographic region in the south of Greece.  The Mani region is located in the Lakonia prefecture of the Peloponese, and is actually the southernmost part of continental Europe. The Mani region is very famous for it extremely mountainous terrain and villages that are very difficult to access. 

Many of the villages are so inaccessible that even in the last few decades they were only accessible by boat.  The sea forms an integral part of the geography, landscape, culture and culinary tradition.

When compared to the rest of Greece, the Mani region is relatively arid and receives less rainfall, but also has a milder, dryer, winter that is perfect for the cultivation of various agricultural produce.  Despite this fact, the region produces some of the best agricultural and food products in Greece.  The people of the Mani region claim to be descendants of the ancient Spartans and are famous for being very traditional and very proud of the food products they produce.  Traditional and distinctiveness are two characteristics of the region. 

Types of Salt

Three very common salts used are table salt, sea salt, and fleur de sel.  By far the largest volume of salt produced is table salt which is made by putting water into salt deposits and evaporating the mixture until only salt crystals remain.  Sea salt is created by evaporating sea water until only the salt is left.  Sea salt is not as dense as table salt.  Fleur de sel is a type of sea salt obtained by harvesting the young crystals that form on the surface of salt evaporation ponds.  The harvesting takes place in summer when the sun is the strongest.  Fleur de sel has a higher mineral content than table salts.

Table salts are almost all artificial.  Out of over 80 different minerals that are found in the ocean only two can be found in artificial table salt.  Table salt is manufactured using industrial machinery and equipment and by the time the process is complete there are almost no minerals that are helpful and beneficial to the human body and health left behind.  Chemical additives are used to make table salt.  Greek fleur de sel using only natural sea water and has many health benefits.

Jacques de Langre in his book Sea Salt’s Hidden Powers made several observations, some of the most interesting being: Refined salts even when mixed with salt water kill salt water fish.  Therefore the effect of refined salt on the human body and internal organs is questionable.  Fruits and vegetables are almost salt-free.  This is why many vegetarians suffer from anemic conditions and other salt-starvation diseases.  Every one of the body’s essential minerals is found in sea salt and no chemicals, preservatives, or anything unnatural should be added.

To prevent moisture from being reabsorbed, salt refiners also add alumino-silicate or yellow prussiate of soda as desiccants plus bleaches.  This salt is then sold in stores for human consumption.  The result is something that is unnatural and not very healthy for the human body.  This can be the cause or health problems.  When most salts are harvested they are put through a series of harsh steps that cracks the molecular structure, robs the essential minerals and adulterates the salt with chemical additives.  It is then bleached and iodized.  The entire process takes out the essential nutrients that are present in our salt.  Amazingly, the French scientist and Nobel Prize winner Dr. Alexis Carrel kept a chicken heart alive for years by having the pulsating heart in a solution of sea salt.  Unnatural, refined, salt is not healthy for the body.
